Marinades can make or break your meat. Once upon a time, I used too much vinegar to marinate flank steak, and the result was…well, it was disgustingly acidic. My boyfriend tried to convince me that it was palatable, but he’s a terrible liar. Fortunately, these failures are a rarity and most marinades are a success, imparting the desired flavours in your meat.
When faced with a dinner dilemma earlier this week, I knew steak was the best option. I needed a marinade, so I pulled a few ingredients from the fridge: balsamic vinegar, soya sauce, Worcestershire sauce, and my personal favourite, fresh garlic.
When it comes balsamic vinegar, I’ve grown fond of Soffritto Olive Oil + Vinegar Bar, a local purveyor of fine oils and balsamic vinegars. I chose the dark chocolate balsamic vinegar – using three types of chocolate, this vinegar has a deep, complex flavour palate and is aged in the traditional Solero Method from Modena, Italy.
I marinated sirloin steak for three hours and pan-fried it in butter. The result? Perfect.
Dark Chocolate Garlic Steak Marinade
1/4 cup low-sodium soya sauce
1/4 cup Soffritto dark chocolate balsamic vinegar
2 tbsp. Worcestershire sauce
6 cloves fresh garlic, minced
1 tbsp. barbecue sauce (used habanero sauce)
1 tsp. garlic powder
1 tsp. black pepper
Mix all ingredients together in a medium-sized bowl. Pour over meat. Marinate for 2-3 hours.
Grill as desired, and serve.
